Paper wrapped cake (紙包蛋糕)









recipe from Christine

50g butter
60ml milk
100g cake flour
5 egg yolks

5 egg whites
1/4 cream of tartar
80g sugar



Method
  1. Preheat Oven 180C
  2. Melt butter in double boiler or in microwave
  3. Once butter has melted, stir in milk, flour and mix with a whisk. 
  4. Whisk in beaten egg yolks. Set aside.
  5. Make meringue.Using mixer, beat egg white until foamy, add in sugar in 3 batches and continue beating until stiff peaks
  6. Fold 1/4 meringue into the egg yolk batter, then pour the egg yolk batter into the egg whites and fold throughly but gently.
  7. Bake at preheated 180 for 20-30 min




Note
Cake is very light and fluffy, I should have use a higher cupcake mould next time.

Is it like the paper cup cake sold in crystal jade? I love those cakes. They tell me use paper cup, but I do not like paper cup with prints just incase the color emit somethg toxic. I have not tried this kind of cake thou. :) See your cake make me so hungry.

I like it because of the size (which is generally bigger than other tabletop ovens). If I'm not wrong, at the time of my purchase, it was the biggest tabletop oven available.

I also like it that the fan is at the back and not at the side which helps in even better heat distribution. And it has a light (which my fuse has blown some time back, have yet to get it changed).

I'm not sure it is the same as sold in crystal jade. But it taste like "Gai Dan Gou" I should have bake it in taller paper cup or uses chiffon pan next time

I've never seen a cake wrapped in paper. It looks funny and really good! I think I must try this too! Greetings from Norway :)
