I got the recipe from Joe Deli This recipe is so easy to make , just mix everything well. And the batter is ready to bake.
Ingredients
160g butter
150g caster sugar
3 medium eggs
140g all-purpose flour, sifted
30g cornflour, sifted with all-purpose flour
1 tsp baking powder, sifted with all-purpose flour
1 tsp vanilla essence
80ml milk
Method
- Preheat oven at 170-180 deg C. Prepare a greased loaf cake tin.
- Combine all ingredients in a mixing bowl. Beat with mixer at slow speed until combined.
- Increase to medium speed and beat until mixture turns pale and creamy. Pour into prepared tin.
- Bake in the preheated oven for 40-45 minutes until golden brown and springy to touch.
- Leave to cool in the tin for about 5 minutes before turning the cake onto a wire rack to finish cooling.
I used electric mixer and everything turns much easier. The only this is i find that the cake is too sweet and will reduce it next time. Other than that the middle part wasn't cooked! Even though i follow the instruction baking at 170-180 deg C for 40-45 minutes.
Perhaps i should try at 170 deg C for 50 minutes (longer) and see how it turns out.
