Cappuccine Vanilla Oat Cookies
190g plain flour
1/2 tsp bicarbonate soda
1/4 tsp baking powder
1/4 tsp salt
80g caster sugar
75g light brown sugar
1/2 tsp vanilla essence
150g rolled oats
100g chocolate chips
1.Preheat the oven to 180 C. Grease 3 or 4 baking sheets
2.Sift (A) into a mixing bowl. Set the bowl of sifted ingredients aside.
3.With electric mixer, cream (B) together thoroughly in a bowl
4.Add (c) and continue to beat until light and fluffy
5.Add(A) and beat on low speed until thoroughly blended. Stir in (D), mixing well with a low speed.
6.Drop heaped teaspoonfuls onto the prepared baking sheets, spacing the dough about 1" apart
7.Bake for 15 minutes, until just firm around the edge but still soft in the centre. Transfer the cookies to a wire rack and leace them to cool.
1. Can yields around 36 cookies
2. Keep an eye close during the last few minutes as cookie can easily turn brown /dark.
