Honey Walnut Muffin
I've tried this muffin , would like to share this recipe with you all.
140g self raising flour
1/8 tsp baking soda
140g butter ( i find it a bit oily , will reduce it to 100g next baking)
40g castor sugar
3 tbs honey
1 tsp vanilla essence
1.Preheat oven to 180 deg C about 15 minutes. Grease muffin tins
2.Sieve self raising flour with baking soda and salt
3.Beat butter until soft. Mix in sigar and beat until creamy.
Add honey and beaten eggs. Mix well
4. Add vanilla essence and sieved flour (setp 2). Mix in walnuts
5.Pour batter into muffin tins
6.Bake for about 18-20 minutes until golden brown and done.
Set aside on the rack to let cool.Serve
The recipe call for 140g butter which i find a bit oily.
The texture of the muffin is soft and nice
