Durian Yogurt Cake
This is a very unusual Durian cake,unlike my previous durian cupcakes which also contains yogurt.This one totally different. The taste of this cake is like eating a durian or even durian cheesecake (but not cheese here) It is like melting in your mouth. The original recipe is from She Simmers
Durian Yogurt Cake
(Makes one 9-inch round cake)
[A]
250g durian puree
6 egg yolks
110g yogurt (I use Anlene plain yogurt)
50 g butter (melted)
1/2 tsp salt
65g cake flour
[B]
6 egg white
120g sugar
1/2 tsp cream of tartar
Powdered sugar for dusting (optional)
Method
1. Preheat the oven to 325°F/162°C.
2. Whisk [A] and set aside
3. In
a separate container, beat the egg whites, sugar, and cream of tartar
with an electric mixer on high speed until stiff peaks form.
4.Scoop out approximately one-thirds of the beaten egg whites and whisk it into the durian mixture.
5.Fold
the durian mixture into the remaining egg white mixture gently until no
white streaks remain; be careful not to overmix and deflate the egg
white mixture.
Pour the batter into the prepared pan; bake for 60 minutes or until the center springs back when lightly pressed with a finger.
Let the cake cool in the pan before unmolding.
Dust the top of the cake with powdered sugar, if desired.
