Zebra Cake

Recipe from Jo

[A]
6 eggs
80g sugar
150g cake flour
1/2 Tsp baking powder

[B]
100g melted butter
30g condensed milk
1 tsp vanilla

[C]
2 tsp cocoa powder
1 tsp cocoa emulco
1 tbs warm water

Method
-Dissolve [C] in warm water, set aside
-Beat [A] in high speed until thick ribbon
-Reduce to low speed, add in [B] until combine
-To make chocolate batter, fold [C] into one of the batter.
-Using tablespoon, scoop 3 tbs of uncoloured batter into centre of cake pan. Then, scoop 3 tbsp of chocolate batter onto the uncoloured batter you just scooped into the pan (8" round pan)
-Bake at 170 for 35 min

Notes
- I did a mistake here by dropping 1 Tbs instead of 3 Tbs
- My cake is not soft and fluffy, i wonder did i beat it to the right consistency

Just want to say your blog is very inspiring. Im newly wed, never learn cooking, what more baking! Yet, very tempted to try. You made it seem so easy & possible! Thanks!

No idea what happened above, but that was a post from eons ago to another blog, and I can't seem to get it to stop doing that. However, I'll try again.

My question, regading your zebra cake is, you mentioned scooping 3 T of plain batter into the cake pan, then topping it with 3 T of the chocolate batter..and then baking. 6T of batter for the whole cake? I'm assuming you mean a 'layering' process of 3 T of each batter at a time, and then a swirl through it with a skewer or knife to get that marbled effect?

Lisa,

Sorry if my instruction is not clear. Yes suppose to layer 3 T plain batter follow by 3 T chocolate batter and repeat until all batter finish.

But for the above cake, i did a mistake of layering 1 T instead of 3 T

You do not need a skewer or knife to get that marbled effect.

Hope that helps

Regards

Sukkimi,

I made it using the 3 T drops (no swirling), and to be honest, I think it looks more gorgeous with your 1 T drops! I'm going to do it that way next time. That said..Your photos and baked goods are so beautiful and mouth watering :)

what is cocoa emulco used for? Is it necessary? Where can I find this?

cocoa emulco is just a chocolate essence, you may skip it. Can be found at bakery supplies shop
