The secret to the crust top
recipe from Ruth Reichl I halves it to 2 eggs recipe for my 8" pan 90g Chocolate 70g Butter 2 eggs 1/2 tsp salt 1 cup sugar 1/2 cup flour Method 1. Preheat oven to 200C
2. Melt the butter and chocolate
3. Beat the egg with salt
4. Add the sugar continue beating with mixer on high for full 10 minutes
5. Add chocolate and butter mixture and beat at low speed, just until mixed 6. Add flour and combine quickly, until there are no white streaks.
7. Pour batter into baking pan and put in oven. Immediately turn oven down to 175° and bake for 20 minutes.

The brownies is very soft (melt in your mouth)

May I know what's the secret of the crust top?
Is simple just
1)preheat oven to 200C, once the brownies is in the oven , reduce temp to 175
2)beat egg and sugar for 10 min
